April Winds brings May More Wind

A very fast week this week as we’ve been getting ready to go to Colorado for Sam & Jill’s farewell BBQ in Fruita. They are moving east for Jill’s school. I am excited to go, but oh how much i do not like long drives. The wind is blowing like there’s no tomorrow (which is normal for this time of the year), and it makes everything way too much fun. I have picked up a couple new customers here in RV and it has made the side business very nice as of late. I hope things continue on in this direction, but i hope i can balance it with work and still have some down time to be with Amanda. Next weekend should be just as crazy as we are going to phoenix to see Ceri Gough’s graduation and Dallin Harris’ wedding. He asked me to DJ it so we figured it’d be a good time to get away. All in time to try and get back for Mother’s Day that Sunday. Never rest for us!

Homemade Ice Cream

4 – Eggs
1 – Cup Sugar
2 – Tbls Vanilla
2 – Can Condensed Milk
1/2 – Pint of Whipping Cream
1/2 -Tsp salt

Mix together

Add milk to fill line.

Fill ice and rock salt around ice cream container.

Run mixer about 20 minutes or until ice cream is done.

Red Velvet Cake (John & Ceri Gough)

Cake:
1/2 cup shortening
1 1/2 cups sugar
2 eggs
1 bottle (1 oz) red food coloring
3 tsp white vinegar
1 tsp butter flavoring
1 tsp vanilla extract
2 1/2 cups cake flour
1/4 cup baking cocoa
1 tsp baking soda
1 tsp salt
1 cup buttermilk

Frosting:
1 (8 oz) pkg cream cheese, softened
1/2 cup butter, softened
3 3/4 cups confectioners’ sugar
3 tsp vanilla extract

1. In a large mixing bowl, cream shortening and sugar. Add eggs, one at a time, beating well after each addition. Beat in food coloring, vinegar, butter flavoring and vanilla. Combine the flour, cocoa, baking soda and salt; add to creamed mixture alternately with buttermilk.

2. Pour into three greased and floured 9-in. round baking pans. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

3. In a large mixing bowl, combine frosting ingredients; beat until smooth and creamy. Spread between layers and over top and sides of cake.

The weekend went by way too fast. My mom is still kinda sick but more just tired. She asked Amanda and me to take Mylea and a friend to the carnival, and i began to understand why parents aren’t thrilled about the carnival. One of the mom’s we were talking to made the comment she understands now why there were never allowed to go, “oh ya, i guess they didn’t want us to get hepititus…” Saturday Amanda crammed for school as it is wrapping up for the semester and I hammered out the video for the gymnastics production. It turned out well i believe. Here’s my little broseph doing his thing…

Newho during the day we went out and rode the horses again with Mylea and her friend. The wind was blowing like mad crazy, but Moo did so great! Later in the evening we went to a BBQ and met some new peeps in RV (couples about our age). This next weekedn we are going to a game night which should be a good time. Hopefully some pics coming… Jenn is coming this week and so that will be a good time to see her again.

Is we hicks yet?

Well this last weekend was a really good time. John and Ceri came up and visited us on Saturday night. We ended up over at my Mom and Dad’s for the usual Sunday dinner and then a roping lesson and Ceri’s first encounter with a horse. We let our killer 1 year-old colt, Jigsaw, on her. I think we all had a blast, and i even ended up sun burnt. (Man i love being bald!) For a ton of pics goto our web albums..

The rest of the weekend was ripping all of the video from the Gymnastics competition onto my video editing computer so i can get the DVD together before next weekend. Never a dull moment aournd these parts. YEEHAW!

Funny to remember a comment that my previous bosses’ wife told me that she always knew i wasn’t all sophisticated and was just a small town hick. I guess she is right but it ain’t no 90 something degrees where i’m at either. I guess sophistication involves a lot of being “hot under the collar” hehehe.

Taco Salad

Hamburger
Fritos
Lettuce
Tomato
Cheese

– Fry hamburger
– Essentially make a salad out of everything else
– Add Hamburger & Fritos

McBride’s Guacamole

Pretty much this recipe is never the same but it always ends up tasting very good. Modify the amount of Cottage Cheese, Salsa, and Lemon Juice to suit the taste of your guests.

3 x Avocados (More or less depending on the number of people it’s feeding)
Cottage Cheese
Lemon Juice
Salsa (We like Herdez the best)

– Peel the Avocados
– Mash the avocados, but leave the pits in with everything (don’t mash those) – It helps keep the flavor good, and the avocados green
– Add cottage cheese so you have a light green mixture
– Add Lemon juice (start with 1 TBLS and then add if desired)
– Add Salsa until you like the spice & taste
