9 1/2 Months

We DJed a wedding for a fellow Nursing Student of Amanda’s on Saturday in Show Low.  While there I grabbed the camera and took a picture of her since you all have requested a profile pic of my beautiful wife.  We had a really good time and I even was asked to DJ a company party for one of the attendees in December.  She is currently on her way to take the NCLEX-PN exam in Albuquerque so I am hoping that I can get her to post a little bit on here when she gets back.  We had an appointment yesterday and things are starting to happen.  Doctor Connely told us we still have few weeks to go.  He did copy off all Rustyn’s prenatal data for Amanda to take with her, and told her to call with the birth weight.  We enjoy him, and appreciate his sense of humor.

A few of our Pets

I took out out camera the other day to take a picture of Amanda (who is currently on her way to Albuquerque to take her NCLEX-PN test) and found the pictures of the picnic we went on with Mylea to play with Luna at the Golf Course pond. Click here to see some cool pictures of Luna swimming

We have a colt named Jigsaw that is getting old enough to ride.  We have been working with him to help him trust people and learn some of the queing given by the reins before anyone even gets on him.  He is doing great in the round pen, and works well on the line (blue ropes in the photos) to turn and respond to ques he is given.  This Monday he was actually ridden for the first time by a friend of ours, Bryce Bigham.  He has never broken a colt but did great!

The other pictures are Luna getting a bath before he went to a dog show with Mylea where he won Best in Show and Most Protective.  He received the second award because he actually got in a fight with a dog at the event.

Chicken Enchiladas

Ingredients:

2 – Large Chicken Breasts

24 oz. – Sour Cream

3 – Small cans of Cream of Chicken Soup

1 – Small Can of Diced Green Chillis

Shredded Cheddar or Mexican Cheese

Approx. 20 – Corn Tortillas

Instructions: (Preheat oven to 350 degrees)

1 – Bring Water to a boil in a medium pot and cook chicken

2 – Mix Sour Cream, Cream of Chicken Soup, Shredded Cheese, and Diced Green Chillis into a bowl

3 – Shred chicken and place into the mixing bowl with other ingredients.

4 – Place mixture on a Corn Tortilla and roll it.  Place into a large 9′ x 13′ pan.

5 – Repeat until pan is full of rolled tortillas.

6 – Spread remainder of mixture on top of the rolled tortillas.

7 – Cover with shredded cheese.

8 – Bake for 1 hour at 350 degrees.

Homemade Maple Syrup

1 – Part Brown Sugar

1 – Part White Sugar

1 – Part Water

Maple

Vanilla

Stir together brown and white sugar with the water on a stove warmed to medium until it reaches a boil.  Remove from heat.  Add Maple and Vanilla to your taste.

The only sad part is I can’t buy the album yet. Happy Mom’s Day!

Happy mother’s day to all.  We spent ours at Lyman Lake having a burger fry and hanging out at the Lake.  We found this the oportune time to see if all the hype that Luna would be an awesome dock jumping dog was true.  We even videoed it so we could have the whole moment on film… Ya, not exactly what we were expecting, but he did get better the more we did it.  So after the much anitcipated dock jumping my dad, Cassey Rae, and I headed around the lake to fish a little in a spot that we will be returning to soon.  All that we had were some worms, but I ended up catching a pretty big catfish.  We named him Charlie and he now resides at the ranch.  Currently living in a water trough with our cows he will soon be transplanted into our pond where we will be able to eat water dogs to his delight.  Hopefully it was worth it Charlie, even after that fun ride home in the ice chest.  I’m transcoding the video right now so I can edit it so if it is not up when you read this then check back soon for some dock jumping and even a video from Amanda’s birthday posted below.

Semester = Over

Amanda called me a little while ago to let me know that she passed her second final well over what she needed to advance to the next semester of Nursing. Wow, it just sounded like her class was a reality TV show. She indeed was not voted off of the island, and is very happy to only have a Sociology test between her and her summer. I’m so proud of how well she has done with a baby in her tummy.
I just finished my last final on my lunch break so I’m ready for a month break before Summer classes start back up. I was defiantly looking forward to a summer of no homework, but when I did my Degree Audit and found I have six classes left I decided to take two over the summer and finish up this Fall.
We’ve both already registered for Summer and Fall semesters, and I finally feel like I have the ASU registration circus figured out just in time to finish up. Not that I’m going to complain about it at all! ASU offered me grants so the majority of my tuiton will be picked up by ASU, and the rest will be taken care of by TEP. Thank you Continual Learning Program. Even though NPC doesn’t have a Student Loan program, thus no Grant of Financial Aid program either, she has signed up to teach the Western Dance my parents were teaching so we can offset her Tuition as well. We know everyday we are being blessed, and are trying to always know what we are being prepared for. Pretty much, the Church is true!
I’m so excited to be done with homework, but a programmer I work with told me his wife said the same thing, and now she has homework everyday with her kids. I never thought of it like that so I guess I may never escape the clutches of homework.
